Blueberry · Grape · Maple Syrup
Worka Sakaro from Gedeb, in Ethiopia's Gedeo Zone. Over 400 smallholder farmers, 2,000–2,200 masl, anaerobic natural — dried on raised beds for roughly eighteen days, in the shade of Birbira and Cordia africana. Drinks the way a ripe summer berry should.

Honey-process gesha. Forty-eight hours sealed ferment, mucilage left intact, five days in the solar drier, then almost a month on raised beds.

A yeast co-ferment with strawberry — 24 hours whole-cherry, then depulped and rested another 72 with the co-ferment before a long, low-temperature dry.
